Looking for a recipe that lets you cook once and eat twice or even three times?  Here is a fun recipe that starts as a burger, then allows you to make some fun leftover recipes ensuring you don’t have any waste.

Yield: 6 Burgers
Prep time: 10 Minutes
Cook time: 15-20 Minutes

Ingredients – Ace This Burger

  • MeasureIngredient​​​​​​Prep Notes
  • 2 lb​​Beef, Chuck, Ground​​​​​Divided into 6 patties
  • Taste​​Rub A Dub, 5280 Culinary​​​​Or Your favorite Rub​​​
  • 6 SlicesCheese, Cheddar, Sliced​​​
  • 6 ea​​Buns, Burger​​​​​​Or Texas Toast
  • As NeededLettuce, Tomato, Onion, Sweet Pickles​​for Burger Garnishes

Cooking Directions – Ace This Burger

  • Heat your Grill to high (approx. 450 degrees)
  • Divide the mixture into 6 balls and patty them out into a thin patty, use a press if available
  • Season outside of burgers with Rub a Dub, on both sides
  • Place the burgers onto pre heated grill, onto the grill grates
  • Sear the burgers for 3-4 minutes per side, then move to the upper rack to finish with the high heat and more indirect cooking
  • Cook Burgers to desired temperature
  • Lightly oil or pan spray the buns, then Toast the buns and hold
  • Serve on a platter with some Shredded Lettuce, Sliced Onion, Sliced Tomato and Sweet Pickles
  • DEVOUR!!

Leftover Recipe #1 Sloppy Joe Pastry Pockets:

INGREDIENTS: – Makes 8 Pastry Pockets

  • 2 Ea Burgers, Cooked – From Leftover Burgers
  • 6 Tbsp BBQ Sauce
  •  6 Tbsp Shredded Cheddar Cheese
  •  6 Tbsp Sautéed Onion – if desired
  •  1ea Tube – Biscuits – Large – 8ct

Cooking Directions:

  1. Crumble left over burger meat and place into a mixing bowl
  2. Add the Sauce and Cheese (and onions) to the crumbled burgers.  Mix well
  3. Open a tube of biscuit dough
  4. Flatten a Biscuit and stretch out to a small pancake size
  5. Place 1.5 Tbsp of beef and cheese filling into the middle of the pocket
  6. Fold the pocket like a taco
  7. Crimp the center of the taco fold
  8. Next crimp all the edges
  9. Place onto a cookie sheet pan (sprayed with cooking spray)
    • Space them out by 1” to allow room for expanding
  10. Preheat your oven to 375˚
  11. Place the cookie sheet of pastry pockets on the center rack
  12. Bake for 15 minutes or until golden
    • For more golden crust, brush lightly with melted butter

Leftover Recipe #2Stuffed Peppers:

INGREDIENTS: – Makes 4 Stuffed Peppers

  • 3 Ea Burgers, Cooked – From Leftover Burgers
  • ¾ Cup Tomato Sauce
  • ¾ Cup Shredded Mozzarella Cheese
  • ¾ Cup Cooked Rice
  • 4ea Peppers, Green Bell

Cooking Directions:

  • Crumble left over burger meat and place into a mixing bowl
  • Add the sauce, cheese and rice to the crumbled burgers.  Mix well
  • Cut the top off a medium sized green pepper and scoop out the insides
  • Preheat your oven to 400˚
  • Place the pepper into a small or medium sized cake pan
    •  Depending on how many peppers you are making
  • Add the Burger/Sauce/Rice Mix into the pepper
    • Repeat for each pepper with the same amount of burger mix
  • Top with a small amount of shredded cheese if desired​​​
  • Lightly cover the peppers with foil
  • Place the pan of peppers on the center rack
  • Bake for 15 minutes, covered
  • Using oven mitts remove the pan from the oven and take off the foil
  • Place back in the oven and cook until the top is browned and the cheese is bubbling
    •  Approx 10 minutes
  • Using oven mitts remove the pan from the oven
  • Allow the peppers to rest for 2-3 minutes
  • Enjoy – caution – filling will be hot
