Big Green Egg Plancha Smash Burgers

The Big Green Egg is the ultimate cooking experience!  Gone are the days of pricey meals at restaurants and here to stay are many delicious dishes! Let the grill do the work as you make Chef Jason's Smash Burgers with simple ingredients and the beautiful flavor from your BGE.


Yield: Serves 2-3 people    Prep time: 15 Minutes    Cook time: 8-10 Minutes

Ingredients

  • 1 Pound -  Ground Beef (80/20 - ground chuck)
  • 1 ea -  Large Yellow Onion
  • As Needed -   Olive Oil Blend
  • To Taste -   Kosher Salt
  • To Taste -  Black Pepper, fine grind
  • To Taste  -  Big Green Egg, Ancho Coffee Seasoning
  • 5 ea -  Brioche Bun
  • 5 slices -  Sharp Cheddar Cheese
  • Top with:
    • Red Leaf Lettuce
    • Red Onion
    • Beefsteak Tomato
Burgers:
  1. Load the FireBowl and start the charcoal on half (use the FireBowl divider if using an XL or XXL BGE)
  2. Prepare the Big Green Egg for direct cooking over high heat (500°F)
  3. Insert the EGGspander base and load with the half moon cast iron plancha (over the charcoal) and the half moon grill grate (over the non charcoal side)
  4. Adjust top vent and bottom vent to ¾ open and bring temperature to 500˚
  5. Once temp reaches 500˚ adjust vents to maintain temp at 500˚
  6. While Grill is pre-heating -
    • Remove the Ground Beef from the refrigerator, unwrap and divide into 5 equal sized meatballs, place back in the refrigerator until needed
    • Slice the buns, Onions and Tomatoes and set aside until needed
    • Wash and prep the lettuce into leaves
  7. Load the Onions onto the plancha and drizzle with 1 tbsp olive oil
  8. Saute the onions on both sides until they are slightly caramelized
  9. Divide the onions into 5 piles
  10. 1 at a time, place a meatball onto the onion pile and using heat proof gloves and solid spatula, SMASH the burger patties into the onions
  11. To help prevent the burgers from sticking to the spatula, lightly oil the smash side
  12. Continue the SMASH process for all 5 meatballs
  13. Season the first side and cook for about 4-5 minutes on the first side
  14. Flip the smash burgers and season the second side, cook for an additional 4-5 minutes or until desired doneness is reached
  15. Top with cheese during the last 2 minutes of cooking to melt
  16. Toast the buns if desired on the grill great side or on the plancha
  17. Remove buns and burgers and build your burger masterpiece
  18. Serve with Lettuce, Tomato, Red Onion and Pickles if desired
