Grilled Vegetable Shish Kabobs Recipe

Ready for the most epic Kabobs ever?  We pulled out all the stops for these little gems.  Next up, it’s time to introduce them to your favorite cooking tool.  Your Weber Grill.

Grilled Shish Kabobs Recipe


Yield: Serves 4

Prep time: 15 Minutes

Cook time: 20-25 minutes to internal temp of 160 degrees


Ingredients

Measure   Ingredient                                                   Prep Notes      

1 ea              Pepper, Red Bell, LARGE                      Cut into 1 ½” Cubes

OR               Meat of your Choice

12 ea            Brussels Sprouts, Medium                   Stem end trimmed off

1 ea              Pepper, Green Bell, LARGE                 Cut into 1 ½” Cubes

2 ea              Corn on the Cob, Shucked                    Cut into 1 ½” Slices

1 ea              Onion, Red, Medium                               Cut into 1 ½” Cubes

8 ea              Mushrooms, Baby Portabella               Stem taken off


Prep Directions

Kabob Prep

  • Wash and prep all vegetables as shown above
  • Place into a medium mixing bowl, drizzle with oil
  • Add the Garden Rub – Adjust level to as light or as heavy as you desire
  • Mix well to combine rub and coat Vegetables
  • Transfer to a Ziploc bag
  • Store in fridge for 4 hours, or overnight if desired

Cooking Directions

  • Cut Wash and prep all vegetables as shown above
  • Place into a medium mixing bowl, drizzle with oil
  • Add the Garden (or rub a dub) Rub – Adjust level to as light or as heavy as you desire
  • Mix well to combine rub and coat Vegetables
  • Transfer to a Ziploc bag
  • Store in fridge for 4 hours, or overnight if desired
  • Pre-heat Weber Grill to 400-425 degrees
  • For added flavor, Vegetables may be smoked by adding smoker tube or smoker box to your grill. Smoke as light or as heavy as preferred while grilling
  • While the Grill is pre-heating, Time to make the Kabobs
  • Using a heavy duty metal skewer, Start to skewer the Vegetables as follows:
    • Pepper, Red
    • Brussels Sprout
    • Pepper, Green
    • Corn on the cob
    • Onion
    • Mushroom
  • Once the skewers are done, place onto a cookie sheet
  • Open the pre-heated grill and place the skewers onto the grill grate
  • Sear on the first side for 3 minutes, open the lid and using tongs rotate the Kabobs to the next side
  • Close the lid and cook for 3 minutes, Repeat the process for each side
  • Cook to your desired doneness. Can be spritzed with water if needed to keep the veggies more moist versus grilled
  • Adjust seasoning on all sides (if desired) and remove from the grill, using tongs
  • Finish with butter or oil as desired. For an even better finish, brush with sweet chili sauce
