This fun marinade adds some deep flavor and sweetness to these amazing beef ribs. Ask your butcher for Korean style short ribs or “flanked” cut short ribs.
Kalbi Beef Short Ribs Recipe
Yield: 6-8 people
Prep time: 20 Minutes Prep (overnight marinade time)
Total time: 20 Minutes Prep + 15 Minutes Cook Time
Ingredients

5 lbs Ribs, Beef Short, Korean Style
1 cup Sugar, Brown, Dark
1 cup Soy Sauce
½ cup Vinegar, Rice
¼ cup Aji Mirin, Rice Wine
2 Tbsp Oil, Sesame, Toasted
2 Tbsp Garlic, Fresh, Minced
2 tsp Ginger, Fresh, Minced
3 Tbsp Garden Rub, 5280 Culinary Rub
Prep Directions
- Place the short ribs into 2 heavy duty Ziploc bags
- In a stainless steel mixing bowl combine all of the remaining ingredients, mix well
- Divide the marinade into the 2 bags, squeeze out ALL the excess air and zip shut
- Double bag the marinating meat, place the meat into cookie sheets to catch any drips
- Place in the fridge for 6 hours or overnight if needed
Cooking Directions
- Preheat your Weber Kettle or Big Green Egg to 450 degrees
- Add wood chunks if desired – We recommend Apple or Maple
- While grill is pre-heating, remove the marinated ribs from the bags and allow to drain for 5-7 minutes
- Place short ribs on the HOT grill, over direct heat, using tongs
- Don’t cover grill during cooking, leave grill uncovered
- Grill for 4-5 minutes per side, or until desired doneness is reached
- During the last 2 minutes of cooking, brush with Happy Ending BBQ Sauce and allow to glaze
- Using tongs, remove from the grill and place on a platter for serving
- Garnish with toasted sesame seeds and green onions, if desired
- GREAT served with wok fried rice
