Feed A Party On A Budget – Weber Grill Kabobs, Side Dish and Dessert

If you’re like me, you tend to feed a crowd when you invite people over.  That can be costly and very time consuming.  Today, we work to make it more affordable and efficient. This delicious recipe features an entrée, side and dessert that keeps your party on budget while pleasing guests this summer.


Yield: Serve 4 People (double for 8ppl, triple for 12ppl)

Prep time: 10 Minutes     Cook time: 10-15 Minutes      Cook Temp: 450˚ F Grill Temperature

 

Ingredients

Entre Kabobs

  • 1 lb   Chicken Breast (Boneless, Skinless)
  • 1 lb   Steak, Top Sirloin
  • 1 ea Red Bell Pepper
  • 1 ea  Green Bell Pepper
  • 1 ea   Peeled Red Onion
  • 1 lb  Baby or Mini Red Potatos (cooked and cooled)
  • ½ cup Golden Italian Dressing
  • ¼ cup  Sweet Chili Sauce
  • 2-4 tbsp  Rub-A-Dub, 5280 Culinary 
  • 1 ea  Zucchini, Sliced
  • 1 ea   Yellow Squash, Sliced

Dessert Kabobs

  • 1 ea  Fresh Peeled Pineapple (cut into 2" cubes)
  • 1 ea  Angel Food or Pound Cake
  • 1 ea  Whipped Cream

Cooking Directions:

  1. Clean and sanitize all cutting boards and prep surfaces prior to use
  2. Read all manufacturer’s instructions before using grills and any cooking tools
  3. Clean Weber grill before use – clean grill grates and wipe down with damp towel
  4. Ignite grill and adjust temp to 450˚ F
  5. While grill is heating up – prep skewers as follows
  6. Cut chicken breast into 2” cubes
  7. Place into a mixing bowl
  8. Add Italian dressing, sweet chili sauce and 1 tbsp Rub-A-Dub
  9. Mix well
  10. Allow to sit for 5-10 minutes to “soak”
  11. Cut top sirloin steak into 2” cubes
  12. Cut red and green bell peppers, and red onion into 2" cubes
  13. Slice zucchini and squash into 1" discs
  14. Using the Grill Mark Metal Skewers or grill mark metal skewers
    1. Skewer the chicken pieces being careful not to pack them on tightly
    2. Skewer the steak pieces being careful not to pack them on tightly
  15. Season the steak skewers as desired
  16. Skewer the vegetables as shown in video, spray with cooking spray and season
  17. Place onto a cooking sheet and bring to grill
  18. Open the grill and carefully add the chicken skewers and beef over the hottest part, watch for any signs of flare ups
  19. Using a long pair of tongs, rotate the chicken after 3-4 minutes and ADD the vegetable skewers
  20. Continue to cook with the lid closed and check temp.  desired temp is 165˚ F
  21. While chicken, steak and vegetable skewers are cooking skewer and season the pineapple skewers
  22. Remove the chicken, steak and vegetable skewers using heat gloves and bring into kitchen
  23. Once the chicken, steak and vegetable kabobs are done ADD the pineapple skewers to the vegetable side
  24. Once cooked to your desired doneness, remove from the grill and bring into kitchen
  25. Carefully remove the chicken and steak from the skewers using heat proof gloves and place onto a platter for serving
  26. Carefully remove the pineapple from the skewers using heat proof gloves and place onto a platter, on top of the angel food cake and top with whipped cream
