Not going to lie… this might simply be the most perfect appetizer.  Try it on your pellet grill today!

Yield: 6-8 Portions

Prep Time: 5 minutes

Cook Time: 2 – Hours

Rest Time: 5 Minutes

Cook Temp: 225˚ F

Ingredients

Measure      Ingredient                                                                     Prep Notes
1 pkg             Cream Cheese, 8oz Blocks                                      Well chilled
2-4 tbsp       Texas Sugar, Meat Church                                       or adjust to taste
¼ cup           Blues Hog, Raspberry Chipotle Sauce
1 sleeve         Crackers, Heavy Duty

Preparation Directions:

Wash all tools prior to use
Clean and sanitize all cutting boards and prep surfaces prior to use
Read all manufacturer’s instructions before using grills, or any cooking tools
Clean out Traeger as needed and change or clean drip tray liner
Place bottom grill grate into the upper position (if you have an Ironwood)
Fill pellet hopper with Ace Reserve Blend Pellets
Set Traeger to 225˚ F, hit enter and hit ignite
While Traeger is heating up:
Prepare the Cream Cheese as follows
Using an aluminum foil sheet, sprinkle some Tiki Tiki onto the sheet
Using a gloved hand, grab 1 block of cream cheese and place on the rub
Season the top of the cream cheese block and lightly press on the seasoning to help it stick to the cream cheese
Lift up the block and season all sides, pressing down onto the pan to help stick more rub to the block
Repeat this process for all 3 blocks and carefully arrange them in the disposable
Place the pan into the Traeger on the upper rack
Smoke at 225˚ F for 2 hours or until smoke flavor is achieved
Its normal for the cheese to crack, this is good, this will get more smoke flavor into the cheese
Using heat proof gloves carefully remove the pan and place onto a heat safe surface in your kitchen
Rest the cheese for 5 minutes
Drizzle with Blues Hog Raspberry Chipotle.  Arrange crackers on a platter
Serve with a serving spoon or cheese knife
