New York Steak With Grilled Wild Mushrooms

Yield: Serves 2 people

Cook time: 12-16 Minutes


Ingredients

Measure                         Ingredient                                          

4 fl. oz.                                   Olive Oil Blend

1 pound                                 Mushrooms, Cremini, Shiitake, Button and Oyster - Sliced or hand torn

1 Tbsp.                                   Fresh Thyme Leaves -  Leaves, Minced

1 Tbsp.                                   Fresh Rosemary - Leaves, Minced

1 Tbsp.                                   Fresh Garlic -  Crushed

1 tsp                                        Kosher Salt - Or to taste

1 tsp                                        Black Pepper, fine grind  - Or to taste

4 each                                    New York Strip Steaks, 1” thick or more

As needed                            Olive Oil Blend

Taste                                      Kosher Salt

Taste                                      Black Pepper, fine grind


 

Steaks:

  1. Remove the steaks from the refrigerator and place on counter for 30 minutes to rest and breathe.
  2. Prepare the grill for direct cooking over high heat (500° to 550°F).
  3. Coat both sides of the steak lightly with olive oil blend and season to taste with kosher salt and pepper.
  4. For medium rare, place steak over direct medium-high heat and set timer for 4 ½
  5. Using tongs, turn steak over and grill for 4 ½ minutes more.
  6. Grill the New York Steaks to desired temperature allowing for carryover cooking while resting.
  7. Carryover will be roughly 1 whole temperature.
  8. Remove the steaks from the grill, place onto a half sheet pan and Rest for 5 minutes
  9. While Steaks are resting, Cook the Mushrooms as shown below
  10. Top steaks with mushrooms or serve them warm on the side.
 

Mushrooms:

  1. Cook Mushrooms while steak is resting so you have hot mushrooms and hot steaks
  2. Prepare the grill for direct cooking over high heat (500° to 550°F).
  3. Brush the grill grates clean
  4. In a mixing bowl, combine olive oil, mushrooms and herbs.
  5. Season to taste with salt and pepper.
  6. Toss quickly to coat with oil.
  7. Open the grill and pour mushroom onto the grilling pan, the mushrooms will have absorbed the oil, so there should be no flare ups
  8. Place the basket on the grill over direct medium-high heat and grill the mushrooms for 5 -10 minutes, occasionally moving them around and until the mushrooms start to brown
  9. Browning the mushrooms will help release more Umami flavors.
  10. Set aside to serve warm on the side, or top the steak and serve
