Grilled Skillet Potatoes Recipe
Ingredients:
- 2 ea Russet potatoes, diced medium
- 2 ea Red potatoes, diced medium
- 2 ea Yukon Gold potatoes, diced medium
- 1 tbsp Olive Oil
- 2 slices Apple wood bacon, diced medium
- 1/2 cup yellow onion, julienned
- 1 clove garlic, minced fine
- All purpose seasoning
- 1/2 cup smoked blue cheese, crumbled
- 1 tbsp parsley, chopped
Preparation:
- Dice the potatoes into medium cubes
- Blanch (par cook) in boiling water until half cooked
- Remove from the water and drain well
- Toss with olive oil to prevent oxidation
- Heat up your cast iron skillet or griddle over medium high heat
- Sauté the bacon for 5-7 minutes or until lightly browned
- Add the onions and sauté until slightly browned, approx 3-5 minutes
- Add garlic and sauté for 1 minute
- Add the par cooked potatoes and stir to combine
- Add seasoning to taste
- Cook until the potatoes start to get crispy or browned, approx. 10-12 minutes
- Remove from the skillet or griddle and place into a serving bowl
- Top with the blue cheese crumbles and garnish with parsley
- Serve immediately
