Getting Started With A Big Green Egg Wok

Wok cooking is such a fun and easy way to add amazing flavors to your dish.  Imagine being able to add some flavor from the Big Green Egg to your wok fried rice, it’s possible and its waiting for you at your local Ace Hardware store. Tips and Info:

  • Always be safe while operating a grill and hot materials. Use heat proof cloves while dealing with a hot wok
  • Start the fire in the center of the egg when using the wok
  • Save the plastic bag the wok comes in for easy and clean storage
  • Wipe down the wok with a damp cloth before using it for the first time, to clean it off and get rid of any oils from shipping
    • You want the wok as clean as you can so for your first season, it is as pristine as possible
    • The outside of the wok is not as important to wipe down, but clean it if you would like
  • The wok is very versatile allowing you limitless recipe options like chili, mac and cheese or wok fried rice and more

How to Season Your Wok

  1. Make a well in the center of the charcoal and light
  2. Heat your Egg to 350˚
  3. Load in the bottom ring of your EGGspander (convEGGtor Basket)
  4. Once egg is at temp...
  5. Load the wok into the ring and close the dome
  6. Heat wok for 15 minutes or until wok starts to brown or discolor from heat
  7. Carefully add 4-6 tbsp of higher smoke point oil
  8. Using a towel folded into a small square
  9. Carefully work the oil into the wok until there is nothing in the bottom of the wok
  10. Leave the dome open and allow the wok to burn in the oil for 15 minutes
  11. Repeat the above process 3-4 more times until the oil has “dried”
  12. Using heat resistant gloves or tongs carefully remove the wok
  13. Allow wok to cool for 45-60 minutes
  14. Once wok is cooled, wipe out the wok with a warm cloth and dry
  15. Lightly oil the wok and store in a cool dry place until use

Light Cleaning

  1. When finished cooking, allow wok to fully cool
  2. Scrape out any food or debris
  3. If Needed, add warm water and use a scrubbing pad scrub out wok
  4. Wipe out wok with a wet cloth or towel
  5. Dry wok with paper towel or towel
  6. Lightly oil wok and store in a cool dry place
    • If you kept the wok shipping plastic, wrap wok in bag and allow bag to stick to oil layer

Deep Cleaning

  1. When finished cooking, allow wok to fully cool
  2. Scrape out any food or debris
  3. If Needed, add warm water, 1 drop of dish soap and use a scrubbing pad scrub out wok
  4. Wipe out wok with a wet cloth or towel
  5. Dry wok with paper towel or towel
  6. Lightly oil wok and store in a cool dry place
    • If you kept the wok shipping plastic, wrap wok in bag and allow bag to stick to oil layer
