How To Make A Bacon Blanket For A Turkey

Match up the delectable flavor of bacon and the power of your grill and it's a match made in heaven.

Yield: Covers 1 Turkey
Prep time: 5 Minutes
Cook time: 2-3 Hours depending on smoke time

Ingredients:

2 lbs                Bacon, Applewood, Thick Sliced                                  Kept Cold in fridge           

                                                                       

Cooking Directions:

Preparation:

  • Prepare turkey by removing cavity contents and giblets package under front flap
  • Rinse turkey inside and out and set aside
  • Prepare the Turkey Brine according to package directions and cool completely
  • Line a bucket with a brine bag and carefully place the turkey into the brine bag
  • Add the brine solution and brine the turkey (under refrigeration) for 45 minutes per pound
  • Set Grill or Smoker to 190˚, setup for indirect cooking/smoking and pre-heat
  • Add desired wood chunks or chips to get your desired smoke level or flavor
  • While grill or smoker is heating up, carefully remove turkey from the brine. DO NOT RINSE
  • Place the turkey onto a stable cutting board
  • Rub turkey with olive oil blend and season to taste with Rub-A-Dub Seasoning
  • Place the turkey on the grill or smoker and smoke at 190˚ for 1 hour (more if desired)
  • While turkey is smoking, make your bacon blanket by weaving bacon strips on a sheet of Foil, plastic wrap or butcher paper, keep cold in the fridge until needed
    • If bacon doesn’t fit across the weave, stretch slices to help fit
  • After 1 hour of smoke, adjust grill or smoker to 350˚ and allow to come to temp
  • Open the lid and carefully turn the bacon blanket out onto the turkey
  • *** If you want to save drippings for gravy, add turkey to a pan, then cover with bacon blanket
  • Close the lid and let turkey cook for 2-3 Hours or until minimum cooking temp of 165˚ is reached
  • Carefully remove the turkey from the grill or smoker using heat proof gloves
  • Remove the bacon blanket and save for snacking or chopped bacon needs
  • Allow to cool for 5 minutes
  • Slice turkey and DEVOUR!! – don’t forget the pan drippings for epic bacon enhanced gravy
