How To Make Traeger Pulled Chicken

Roasted Chicken on the Traeger is simply amazing, add to that the fun of using your favorite beer or beverage to infuse some aromatic flavor and moisture, you have all the ingredients for legendary chicken. Ace's Grilling Expert, Chef Jason, will show you how to make this easy and delicious recipe on your pellet grill.


Yield: 1 Whole Chicken     Prep time: 10 Minutes     Cook time: 60-65 Minutes

Ingredients

  • 1 ea-     3-4lb Fresh Whole Chicken
  • 2 tbsp-     Canola Olive Oil Blend
  • 3 tbsp-     Rub a Dub, 5280 Culinary
  • 1 can-     Beer, your favorite choice

Directions

  1. Load Traeger with Reserve Blend (or choice) of pellets
  2. Heat Traeger to 350˚ F
  3. If you want to add some smoke beforehand, turn Traeger to 180 degrees or use Super Smoke Mode (if your grill has this mode) and Smoke for 30-45 minutes prior to roasting at 350˚
  4. Load Reserve Blend Pellets and Preheat Traeger to 350 Degrees
  5. Open Whole Chicken package and drain, then pat dry
  6. Drizzle Chicken with about 2 Tbsp olive oil, on the skin
  7. Season the outside of the cavity with Rub a Dub
  8. Be sure the Traeger chicken throne is clean
  9. Fill the throne with 2 cups of your favorite beer
  10. Tuck the chicken wings under the front part of the chicken
  11. Place the chicken onto the Throne and carefully transfer to the grill
  12. Once the chicken is loaded onto the throne, load the WiFire Probe into the thickest part of the chicken breast and run the wire to the outside of the grill, plug into the controller
  13. Set alarm for 165˚ F
  14. Cook to an internal temperature of 165˚. Remove from Traeger and let rest for 5 minutes.  Rested Temperature should finish right at 170˚ in the Breast lobe.
  15. Once rested, hand shred or pull the chicken into bite sized pieces
  16. Allow to cool completely before storing in zipper bags

Pro Tips

  • Keeping the ingredients simply allows you to use the chicken for a variety of meals and other recipes, so you can cook once and eat twice.
  • Season the chicken in a pan so you can use some seasoning that falls off and put it back on the chicken, without wasting ingredients.
  • For the chicken wings, there is not a lot of meat to shred or use, so enjoy that as a snack while you finish your cooking.
  • You can use the rest of the bones and scraps to make your very own chicken stock.
