Scallops On A Big Green Egg

Egg Setup – Grilling Temp: 450˚ F
Ingredients

3/4 lb Scallops, Fresh Sea Scallops 10/16 count
1 tbsp Oil, Canola/Olive Blend
1 tbsp Tiki Tiki Rub, 5280 Culinary Adjust to your flavor needs
1 tbsp Fishy Fishy Rub, 5280 Culinary Adjust to your flavor needs
Cooking Directions:
Preparation:
Wash all tools prior to use
Clean and sanitize all cutting boards and prep surfaces prior to use
Read all manufacturer’s instructions before using grills, starters and any cooking tools
Remove scallops from the package and remove the side muscle piece (abductor muscle)
Place scallops into a bowl, add oil and season to taste with Tiki Tiki and Fishy Fishy
Cover scallops and allow to sit, on counter, while BGE reaches temp
Preparing Your Big Green Egg
Pre Heat your Big Green Egg to 450˚ F and (if desired) load with your preferred smoking wood chunks (Layer in the wood chunks to create an even sustained smoke flavor)
Burp the Egg before opening
Place the scallops on the grill grate and in the center of the egg
Close the dome and cook scallops on each side for 3-5 minutes
Burp the Egg and flip scallops halfway thru the cooking process to get equal crust on each side
Close the lid and cook scallops until temperature reaches 145˚ F internal
Using oven gloves or heat resistant gloves and long tongs, remove scallops from the Big Green Egg
Drizzle with Fire Honey and devour
