Corn, it’s so good and so perfect for the Traeger.  This recipe enhances that corn flavor, brings out the sweetness and wraps it all up in one wood fired package.

Traeger Smoked Corn Casserole

This is going to be the most requested side dish at your family gatherings, so get ready for the requests to start rolling in.

Prep time: 10 Minutes
Cook time:  1.5 Hours Cook – Hold for 1-2 Hours

Ingredients

1 Can           Cream style Corn                                                      15 oz can                         
2 Cans          Golden Sweet Corn, drained                               15 oz can
1 Pkg            Corn Muffin Mix, Jiffy                                            8.5 oz box                       
1 Pkg            Cream Cheese, 8oz                                                   Diced small/medium
1 Pkg            Cheese, Cheddar, Shredded, 8 oz                       Mild or sharp cheddar
1 Cont           Sour Cream, 8 oz                                                                
½ Cup           Buttermilk                                                                
2 ea              Eggs, Fresh, XL                                                                  
4 Tbsp          Butter, Salted                                                            diced small/medium
Taste            Rub A Dub, 5280 Culinary                                       
Or
Taste            Oink Rub, 5280 Culinary

Cooking Directions:

  • Clean Traeger Grill, refill with pellets and start grill
    • Set temperature to 375˚ F
  • In a large mixing bowl add ALL ingredients above
  • Mix well to combine
  • Spray a 10 qt Dutch Oven with non-stick cooking spray
  • Pour into the Dutch Oven and spread to an even layer
  • Place into the Traeger, uncovered and cook for 1 hour
  • At the 1 hour mark, carefully stir the corn pudding
  • Close the lid and let cook for an additional 30 minutes
  • After 1 ½ hours of cooking time, using heat proof gloves, carefully remove the corn pudding
  • Let the pudding rest for 10 minutes
  • Serve warm and enjoy
