We pulled out the Traeger rib rack today to get ready for a little rib party at our house. My friends threw me a curveball when they said “hey, we need ribs with bite, and some fall off the bone ribs. Can you handle it?"
How To Use A Traeger Rib Rack
Now I'm not here to pick sides in this age-old rib argument, but I am for sure team Ribs with bite. Let’s Get Cooking, Chef Jason

Yield: 8 Racks of Ribs
Prep Time: 10 Minutes + 15 Minutes Seasoning Rest
Cook Time: 6-8 Hours (time can vary based on pork) PLUS 30-45 Minutes Resting Time
4 Racks Ribs, Baby Back or St. Louis Spareribs Peeled
As Needed Oil, Olive, Blended
As Needed Rub A Dub Seasoning to taste
As Needed Oink Seasoning to taste
4 Cups Apple Juice (or Cider) Not from concentrate
taste Fire Honey, 5280 Culinary
taste High Altitude BBQ Sauce, 5280 Culinary
taste Low Country BBQ Sauce, 5280 Culinary
Preparation Directions:
Wash all tools prior to use
Clean and sanitize all cutting boards and prep surfaces prior to use
Read all manufacturer’s instructions before using grills, or any cooking tools
Clean out Traeger as needed and change drip tray liner
Fill pellet hopper with Reserve Blend Pellets
Set Traeger to 225˚, hit enter and hit ignite, add the Rib Rack now so it is ready to go
While Traeger is heating up –
Remove ribs from package, pat dry (if needed)
Carefully use the back of a spoon to remove the membrane
** a napkin or paper towel works great of the membrane is slippery
Lightly oil on all sides
Season on all sides – season one side with Oink and the other side with Rub-A-Dub
Allow to rest for approx. 15 minutes
When Traeger temp hits 225˚ add the ribs to the rib rack. Close the lid
Cook for 45 Minutes, then spray with the apple cider. Spray ribs until they are wet
Spray Ribs every 45 minutes
At the 2 hour mark, flip (rotate) the ribs, spray them and continue to cook
*** At the 4 hour mark, if you are looking for Fall Off The Bone ribs, add butter, sugar and honey to the ribs and wrap in foil. Continue to cook in the foil until your desired doneness is reach
For the normal ribs, leave them on and keep spraying every 45 minutes, until they reach the 5 hour mark
Using Nitrile and heat proof gloves, carefully remove the ribs and place into an aluminum disposable pan and bring into the kitchen
Keep wrapped and allow to rest for 5-10 Minutes (check after 5 minutes for softness)
Adjust seasoning if desired and sauce with Fire Honey, High Altitude BBQ Sauce and Low Country BBQ sauce or serve sauce on the side
Devour!!!

4:00 Smoke Time – 225˚
1:00 Finishing Time – 350˚
Spraying every 45 minutes with apple cider
5:00 Total Cook Time
For the Fall Off the Bone Ribs recipe total cook time was
4:00 Smoke Time – 225˚
1:00 Wrapped and Sauced Time – 350˚
First 4 hours - Spraying every 45 minutes with apple cider
Check doneness and cook until desired fall off the bone texture is reached
